French Meringues

With only two ingredients, this French Meringue recipe is easy to make — perfect for a first attempt at simple, authentic meringues.

A low-temperature long bake will yield a crunchy and sweet bite-sized treat ideal for sharing at any gathering!

Ingredients

  • 4 egg whites at room temperature
  • 2 1/4 cups powdered sugar

Materials

*If you don’t have piping bags or decorating tips, you can use large zip-close bags instead. Trim off the corner to allow your mixture to flow easily (without squeezing too hard).

Use a large open-star tip to achieve the conventional meringue look. Alternatively, use a large round tip or zip-close bag with the corner trimmed.

Directions

  1. Preheat oven to 200 degrees F. Line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat egg whites on medium speed until foamy.* Gradually sprinkle in sugar while continuing to beat on medium speed. Beat the egg and sugar mixture until thick, smooth, and satin-like,* approximately 15 minutes.
  3. Transfer mixture to a large piping bag and pipe meringues* onto the prepared baking sheets.
  4. Propping the oven door open slightly with a wooden spoon, bake for 3+ hours until dry throughout. Meringues should lift easily from parchment. Allow to cool and store in an airtight container before serving.
